The Cibolo Center for Conservation hosted a pair of cheese-making classes at Herff Farm on Saturday as participants received the opportunity to learn about and then make their own Farmers Cheese under the direction of instructor Mark “Merriwether” Vorderbruggen. The afternoon session had seven students, including Ruth Lengston and George Lengston-McGuire, who intently listened to Vorderbruggen and closely followed his directions (first picture). Also participating were Sarah Toussaint-Mason and Theodore Mason, (second picture) who needed his brow wiped because his hands were too busy straining unneeded materials out of his cheese to do it himself.
